Birthday Cake Energy Bites

Servings 14 balls

Ingredients
  

  • 1 cup Medjool dates pitted
  • 1 cup cashews salted
  • 1/2 cup quick oats
  • 1 Tbsp maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2-3 Tbsp sprinkles

Instructions
 

  • Combine all ingredients but the sprinkles in a food processor.
  • Process until all ingredients are evenly ground together. You might need to stop and break up the large ball that is formed and process a couple more times.
  • If your dough is warm from all that processing, allow it to cool by placing in the refrigerator for a little. Then, mix in the sprinkles.
  • Roll into 14 balls. If your hands get sticky, wash off the excess and spray them with a little oil before rolling.
  • Store in the refrigerator or freezer.

Notes

Other Thoughts:
  • If your dates are super sticky <like mine were this time> add another Tbsp or 2 of oats and process again. Or, add less/no maple syrup. Also, if the dough feels sticky while it is warm out of the food processor, store it in the refrigerator for a little before you roll into balls.
  • Store in the refrigerator or freezer. They get a little soft and sticky at room temperature.
  • Hoard them from your neighbors and housemates so they don't disappear.
 
How-to-Use:
Athletes: Before, after, during exercise .... all are perfect opportunities to consume these guys. They do have some fat in them so I wouldn't recommend eating them during high intensity exercise - think more like long rides or hikes.
Healthy Eating: Don't we wanna eat more foods that taste like cake?! Keep these in the refrigerator or freezer for a quick snack.
Kids: Is it just us or when sprinkles come out are kids immediately a thousand times more interested in what you are doing?! Needless to say - these were a hit.
