Air Fryer Sriracha Tofu Bowls

Ingredients
  

  • 14 oz extra-firm tofu drained & pressed
  • 2 tbsp tamari or soy sauce
  • 4 tsp sriracha divided
  • 1 tsp sesame oil
  • 2 tbsp teriyaki sauce
  • 2-3 cups broccoli roasted or steamed
  • 2-3 cups rice cooked

Instructions
 

  • Press water out of tofu by placing the block between a towel & applying light pressure. You can do this for 1 minute or 10 minutes - whatever you have time for. The longer you press, the firmer the texture. Feel free to put a heavy pan or can on top of the towel so you can walk away and chop your broccoli.
  • Cut tofu in half horizontally. You are making the blocks thinner. Then, cut the entire block into 16 pieces, 4 slices in each direction. You now have 32 pieces of tofu.
  • In a medium bowl, mix together tamari or soy sauce, 2 tsp sriracha & sesame oil. Toss the tofu in the sauce.
  • Heat air fryer to 375℉. Spray your pan with oil. Lay tofu evenly on the pan. Cook for 10-12 minutes, turning once.
  • In another medium bowl, mix 2 tsp sriracha & teriyaki sauce. Add cooked tofu and toss in this sauce.
  • Assemble your bowl with ½ tofu, rice & broccoli.

Notes

Other Thoughts: I rarely see people eating enough tofu in a sitting to meet their protein needs. ½ block of tofu is 18 gm protein, which may still not be enough for you at a meal. Add more tofu or edamame to the bowl. Or, drink a glass of higher protein non-dairy milk on the side.
How to Use:
Athletes: Perhaps double the tofu recipe and make this into 3 meals! Adjust the rice to your current nutrition needs depending on your training.
Healthy Eating: Don’t let the recipe hold you back! Toss in any veggies you’d like.
Kids: This is a little spicy! If your kids don’t like that, I’d recommend leaving the sriracha out of the teriyaki sauce.
