Lemon Blueberry Baked Oatmeal

Ingredients
  

  • 3 eggs
  • 1/3 cup maple syrup
  • 2 cups milk
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • zest of 1 lemon
  • 2 1/2 cups old fashioned oats
  • 1 tbsp chia seeds
  • 1 tsp baking powder
  • 1 cup blueberries

Optional Toppings

  • 3/4 cup vanilla Skyr or Greek Yogurt
  • drizzle of honey
  • blueberries

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium bowl, mix eggs well. Then, add maple syrup, milk, lemon juice, vanilla & almond extracts, and lemon zest. Mix well.
  • Add oats, chia seeds, and baking powder. Mix well.
  • Gently fold in blueberries.
  • Pour oatmeal mixture into an 8x8 inch baking pan.
  • Bake for 35 - 45 minutes or until slightly brown on the edges and firm in the middle.
  • Enjoy as is. Or, top with Greek yogurt or Skyr and more blueberries.

How to Use
Athletes: Feel free to eat more than one serving. And, make sure to add more protein. I recommend adding a container of vanilla Skyr + more blueberries.
Healthy Eating: This is a great option for breakfast or a snack. Make sure to add more protein from Greek yogurt, Skyr, or a protein shake.
Kids: My kids thought this one was a winner. I hope you can share with yours too! Cut it into bite sized pieces and put some toothpicks into it to make it more fun for them.
