Preheat oven to 350 degrees F.
In a medium bowl, mix eggs well. Then, add maple syrup, milk, lemon juice, vanilla & almond extracts, and lemon zest. Mix well.
Add oats, chia seeds, and baking powder. Mix well.
Gently fold in blueberries.
Pour oatmeal mixture into an 8x8 inch baking pan.
Bake for 35 - 45 minutes or until slightly brown on the edges and firm in the middle.
Enjoy as is. Or, top with Greek yogurt or Skyr and more blueberries.
