Cinnamon Roll Baked Oatmeal

Ingredients
  

  • 3 cups old fashioned oats
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 eggs
  • 1 cup milk
  • 1 cup Greek yogurt, plain
  • 1/3 cup vanilla protein powder
  • 1/2 cup honey
  • 3 tbsp butter, melted

Swirl

  • 2 tbsp butter, melted
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 375 degrees F. Grease 8x8 inch pan.
  • In a medium bowl, mix together all the oatmeal ingredients - oats through melted butter.
  • In a small bowl, mix together the additional 2 Tbsp melted butter, brown sugar and cinnamon.
  • Add half the batter into prepared baking dish.
  • Drizzle half of the butter, sugar, cinnamon mixture over half the batter.
  • Top with remaining oatmeal mixture.
  • Drizzle remaining butter, sugar, and cinnamon mixutre over the top. Use a toothpick or knife and swirl the cinnamon mixture into the top of the oatmeal.
  • Bake for 25 - 30 minutes or until the center is set and edges are lightly brown.

How to Use
Athletes: Add an extra serving of oatmeal if needed. Or, cut a bigger piece. Top with 3/4-1 cup of vanilla Greek yogurt, and it tastes like cinnamon roll icing! 
Healthy Eating: Add some additional protein via Greek yogurt, Skyr, or a side of eggs. 
Kids: This is a very kid-friendly meal! 
Vegan Option: Substitute flax eggs for eggs. Use plant-based milk, butter, and yogurt. And you won't be able to tell the difference!
