Look out, there is a new favorite baked oatmeal in town! Seriously, though, some of the most popular recipes around here are baked oatmeal recipes. It’s so easy to toss it into the oven, then divide it up into servings, put it in the refrigerator, and have breakfast for the week. If you’re a warm oatmeal purest, just throw it in the air fryer or microwave for a moment and tada. A warm breakfast is served.
Never have I ever met someone who didn’t love cinnamon rolls. But also, why not turn that amazing flavor into something that packs a real nutritional punch? Carbs – Fiber – Protein – Fats. It’s the perfect balance to keep you fueled all morning. Ps… this cinnamon topping MAKES this recipe. It’s a have – to – try – asap type of recipe.

Another stellar thing about this recipe, it’s ungodly easy to throw together. Just dump the first 9 ingredients into a bowl, and the oatmeal is ready. Then, mix the cinnamon topping in a small bowl, and you’re ready to roll. The hardest part is waiting for it to cook and cool before cutting. We won’t judge if you dive right in, though.

Cinnamon Roll Baked Oatmeal
Ingredients
- 3 cups old fashioned oats
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 2 eggs
- 1 cup milk
- 1 cup Greek yogurt, plain
- 1/3 cup vanilla protein powder
- 1/2 cup honey
- 3 tbsp butter, melted
Swirl
- 2 tbsp butter, melted
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 375 degrees F. Grease 8x8 inch pan.
- In a medium bowl, mix together all the oatmeal ingredients - oats through melted butter.
- In a small bowl, mix together the additional 2 Tbsp melted butter, brown sugar and cinnamon.
- Add half the batter into prepared baking dish.
- Drizzle half of the butter, sugar, cinnamon mixture over half the batter.
- Top with remaining oatmeal mixture.
- Drizzle remaining butter, sugar, and cinnamon mixutre over the top. Use a toothpick or knife and swirl the cinnamon mixture into the top of the oatmeal.
- Bake for 25 - 30 minutes or until the center is set and edges are lightly brown.
