Move over boring rice bowls, we’ve got Chipotle Chicken Bowls with potatoes as the base to crush dinner this week. Plus, these bowls keep very well and are excellent for meal prep or lunch leftovers. First, we need to whip up a batch of Chipotle Chicken in the slow cooker. Don’t worry. This recipe is super easy, needs no chopping, and has all the flavor. Just dump all the ingredients in, then set it to cook, and all you need to do is shred the chicken once it’s done. Next, we need to cook the potatoes. I personally love the 1# boxes of potatoes you pop right into the microwave; they are perfectly cooked in 4 – 5 minutes. (like these from the Little Potato Company) Otherwise, you can boil your mini potatoes or use any potatoes you’d like.

Feel free to get creative when you build your bowls and add whatever toppings you want. I highly recommend some shredded romaine lettuce, pico de gallo, white cheddar, and some pickles. Plus, highly recommend you make your own Chipotle Mayo (+ greek yogurt) for the top. It really seals the deal on this one. (recipe below)

Build-a-Bowl is one of the best meals for meeting everyone in the house’s nutritional needs and preferences. You can adjust the carbs, protein, and veggies to make everyone happy. (And, I won’t judge if you decide to put this over rice or in a burrito instead – it would still be crazy delicious.)

Chipotle Chicken & Potato Bowls

Servings 8

Ingredients
  

  • 1 recipe Slow Cooker Chipotle Shredded Chicken see recipe notes for link to recipe
  • 2 lbs potatoes
  • 1 cup white cheddar cheese shredded
  • 2 heads romaine lettuce sliced
  • 1 cup pickles
  • pico de gallo store bought, fresh

Chipotle Sauce

  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 1 clove garlic diced
  • 2 tsp lime juice
  • 1 tsp honey
  • 2 tbsp ground chipotle pepper
  • ½ tsp salt

Instructions
 

  • Cook the slow cooker chicken per the recipe.

  • Boil or microwave the potatoes until cooked through.
  • Mix up the chipotle sauce while the potatoes cook. And, chop up your lettuce and shred your cheese, if needed.
  • Place 4 oz cooked potatoes in the bottom of a bowl. Smash them up a little for more fun. Top with 4 oz of shredded chicken, ½ cup of lettuce, a few pickles, 2 tbsp of cheese, 1 tbsp of pico de gallo and a drizzle of chipotle sauce.

How to Use
