We see you hungry runners. We know the importance of balanced meals to support our daily lives and running, but some nights are just too crazy to put a solid meal on the table. This recipe has you covered! Grab all these ingredients at Acme Fresh Market or your favorite grocery store, and dinner comes together in less than 15 minutes. Bonus points that it is absolutely delicious and contains carbs, protein, and all the colorful veggies!

This recipe was inspired by viral rotisserie chicken recipes, where people threw everything into a bag with a rotisserie chicken, and dinner was served. I loved the ease of this dinner, but knew we could kick it up a few notches to meet the nutrition needs of runners and make it even more delicious. The goal of this recipe is the least amount of preparation with the maximum amount of flavor, and I think we accomplished just that.

Toss the meat from the rotisserie chicken into a large bowl, then dump the coleslaw mix (no sauce, just the cabbage and carrots), edamame, and rice into the bowl. Now you need to grab a knife and a cutting board to quickly (but carefully) chop the green onions, cilantro, and cucumber. Dump those into the bowl. Then, just combine your three sauce ingredients together in a small bowl, mix, and dump them into the bowl. I suppose you could just dump the sauces straight into the bowl if you are feeling crazy! Mix this well with 2 large spoons or tongs. And, just like that, dinner is served. I timed myself making this, as us crazy runners will do, and it took me 12 minutes from start to finish to put this dinner on the table.
If you do not plan to eat all four servings at once, it will save for two days in the refrigerator very well. Feel free to save this for lunches or dinner the upcoming days. After about two days, it does get a little soggy and no one wants a soggy salad! But, something tells me you will have no trouble finishing this meal within 48 hours!

Feel free to top your plate with extra chili crunch oil and sesame seeds for extra flavor and crunch. Enjoy and let us know what you think!

Runner Rotisserie Chicken Salad
Ingredients
- 1 rotisserie chicken
- 1/2 bag coleslaw mix
- 5 green onions
- 1/2 a bunch of cilantro
- 1 seedless cucumber
- 1 bag frozen edamame, 10 oz
- 2 bags precooked rice, 8.8 oz each
- 1/2 cup tamari or soy sauce
- 1/4 cup hoison sauce
- 1 tbsp chili crunch oil
Instructions
- Grab a large bowl. Pull the rotisserie chicken off the bone and skin. Shred with your hands or forks. Place in the bowl.
- Add 1/2 bag of the coleslaw mix.
- Chop the green onions, cilantro, and cucumber. Add to the bowl.
- Cook the edamame and rice in the microwave per the instructions on the bag. Add to the bowl.
- In a small bowl, mix the tamari or soy sauce, hoisin sauce, and chili crunch oil. Pour is over the large bowl of ingredients.
- With large spoons or tongs, mix together well and enjoy.
Notes
- Make this your own - feel free to sub different veggies as needed.
- If you prefer to use leftover chicken, aim for 3 cups cooked, shredded chicken.
