Listen up, cinnamon sugar bagel lovers… we’ve turned our favorite nostalgic childhood breakfast into a make-ahead egg bake that has all the flavor of said favorite but enough protein to get you through your morning and recover from your run. All it takes are the ingredients below: bagels, eggs, egg whites, vanilla Greek yogurt, brown sugar, and cinnamon. Think cinnamon sugar bagels meet bread pudding and that’s your breakfast! Who doesn’t want that?!

The EBTB Egg Bake has been a hit around here for a while now, so it was only a matter of time until we turned that savory option into a sweet one. Just chop up 4 plain bagels and mix up the eggs + egg whites + Greek yogurt + vanilla extract + brown sugar + cinnamon and you’ve got an insanely satisfying breakfast for the week. (If it lasts that long!) Each serving (1/6th of the recipe) contains 25 g of protein and 60 g of carbs making it an incredibly balanced way to start your morning or recover from that morning workout. If you need more protein than that, just top with more Greek yogurt. This only lastest 3 days in our house with 3 out of the 4 of us devouring it. The fourth decided he still likes the Chocolate Blender Muffins best for breakfast. More for us!

The ‘hardest’ part about this recipe is waiting for it to bake. Since it has a whole lotta eggs and liquid in there, it does take over an hour to bake. But, you can go on with your life and let this bad boy bake through. Promise it’s worth the wait!


Cinnamon Sugar Bagel Bake
Ingredients
- 4 plain bagels approx 460 grams in weight or 220 grams carbs
- 1 tsp cinnamon
- 6 eggs
- 2 cups liquid egg whites
- 1 cup vanilla Greek yogurt
- ½ cup brown sugar
- 2 tsp vanilla extract
Topping
- ¼ cup granulated sugar
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350℉. Grease a 7.5 x 10.5 inch pan.
- Cut or tear bagels into bite-sized pieces. Spread bagel pieces evenly into the pan. Sprinkle with cinnamon.
- In a bowl, combine eggs, egg whites, greek yogurt, brown sugar, and vanilla extract. Whisk very well.
- Pour egg mixture over the bagels.
- In a small bowl, mix together the granulated sugar and cinnamon. Sprinkle the dish with cinnamon sugar mixture.
- Cover with foil and bake for 45 minutes. Remove foil and bake until golden brown and eggs are cooked through. This should take about 25 more minutes.
- Allow to cool before cutting. Store in containers for the week.
