You have probably tried Christmas Crack at some point in your life (saltines, brown sugar, butter, chocolate) that is broken apart and rocks a mean cookie platter. Well, we clearly needed to bring graham crackers into the Crack game. <the true crack around here> So, that was the inspiration for this recipe – all the deliciousness of crack but add some grahams – and I won’t judge if this is your holiday pre-run snack.

In my Featherstone Nutrition version of Crack – instead of saltines, I used graham crackers, because those are one of my favorite foods/fuel ever (I have been dubbed the Graham Queen by some). Another ingredient I switched up is that I used avocado oil instead of butter. Avocado oil has a healthier fat profile & a mild flavor, so I use it often in my baking and cooking. Lastly, I added some honey to make the flavor & sweetness juuust right.

If you are making a cookie tray for the holidays, your friends & family will thank you if you have some Graham Crack on that tray. Graham Crack

Ingredients
  

  • 8 graham cracker sheets
  • ¼ cup avocado oil
  • ¼ cup honey
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • tsp salt
  • ½ cup semi-sweet chocolate chips
  • ¼ cup mini M&M's can also use chopped big M&M's
  • sprinkles

Instructions
 

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine oil, honey & brown sugar in a microwave-safe bowl. Whisk well. Microwave for 60 - 90 seconds. Whisk again. Watch it so it doesn't boil over!
  • Add vanilla extract & pinch of salt. Whisk.
  • Line 8 graham cracker sheets on the parchment paper lined baking sheet. Pour honey mixture evenly over graham crackers. Spread evenly over the grahams with a spatula.
  • Bake for 10-12 minutes. When you pull this out of the oven, it will be a bubbly mess - you did it right! With a spatula, push the grahams back into a rectangle and push any extra caramel sauce back over the grahams. <The bubbly caramel will harden after it cools.>
  • Immediately, sprinkle with chocolate chips. Allow them to melt. It should take 2 - 3 minutes. Once melted, spread evenly with a rubber spatula. Sprinkle with M&M's and sprinkles.
  • Allow to cool completely. Then, chop into pieces and enjoy. Store in an airtight container.

Notes

How to enjoy:
For healthy eating: Enjoy a piece or two if you need a sweet treat!
For athletes: You can have this as dessert after a meal or a pre-exercise snack (simple carbs!).
For kids: Kids will go bananas for this one. You can try to save it for dessert after a meal, but I have a feeling they will want to snack on this during the day.
