It’s no secret that we love oatmeal around here. The original Peanut Butter Baked Oatmeal has been one of the most popular recipes around here since the beginning of Featherstone Nutrition circa 2017. So, it felt like it was time to add in another addition. When one of you reached out on social media asking for lemon-blueberry baked oatmeal, it was only a matter of time before this happened. That time is now, and here is my new favorite breakfast recipe.

To get started, gather all of your ingredients. Everything is pretty standard and easy to find, or you may already have it in your cupboard. The only exception is a tiny addition of almond extract, which, in my opinion, is absolutely necessary. Sometimes we try to cram all the macronutrients you need into one recipe around here. But, that was not the intention here. This recipe packs whole grain carbs, a small amount of fat, and a decent amount of protein – but you will likely need to add onto this oatmeal to make it a meal.

With summer right around the corner, it only seems fitting to bring out the bright, fresh flavors. Who doesn’t love a lemon blueberry combo?! We already have Lemon Blueberry Blender Muffins as an option, but for those of you who don’t want to whip out your blender, this one is for you. Plus, there is something about sinking your teeth into a big chunk of baked oatmeal that just hits different.

I recommend adding a container of vanilla bean Skyr or Greek yogurt to the top of your oatmeal. This will bring the protein from 15 g per serving of oatmeal up to 32 g protein, which is a great amount to start your day. Research shows eating enough protein, fiber, and total energy at breakfast helps us say satiated and make balanced nutrition decisions throughout the day.

Lemon Blueberry Baked Oatmeal
Ingredients
- 3 eggs
- 1/3 cup maple syrup
- 2 cups milk
- 1/4 cup lemon juice
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- zest of 1 lemon
- 2 1/2 cups old fashioned oats
- 1 tbsp chia seeds
- 1 tsp baking powder
- 1 cup blueberries
Optional Toppings
- 3/4 cup vanilla Skyr or Greek Yogurt
- drizzle of honey
- blueberries
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, mix eggs well. Then, add maple syrup, milk, lemon juice, vanilla & almond extracts, and lemon zest. Mix well.
- Add oats, chia seeds, and baking powder. Mix well.
- Gently fold in blueberries.
- Pour oatmeal mixture into an 8x8 inch baking pan.
- Bake for 35 - 45 minutes or until slightly brown on the edges and firm in the middle.
- Enjoy as is. Or, top with Greek yogurt or Skyr and more blueberries.
